In the past few months I have made the pakoda so many times and have tried different variations of this Broccoli Pakoda recipe.Finally the one I made yesterday was just beyond perfect..You don’t feel like you are eating a baked pakoda version. It has all flavours of deep fried ones yet healthier. Managed to take step by step pictures as well.So thought of updating it in the blog as soon as I can 🙂 Depending on the type of Oven you use, baking time might vary. Kindly keep an eye and remove broccoli florets from the Oven once its crispy & baked well.
I used cooking spray to spray the oil on broccoli florets before baking them in oven. If you don’t have spray take a spoon full of oil and slightly drizzle them on top of the florets. Also if you want you can also add some fennel seeds to the pakoda mix. Use generous amount of Besan/Bengal Gram Flour so that you get a cripsy layer covering the broccoli florets. The following measurement serves two.

- 400 gms Broccoli
- 1.5 cups Besan/Bengal Gram Flour
- 1/2 cup rice flour
- 1/2 tsp salt
- 1 tsp Chilli Powder
- 1/2 tsp Turmeric Powder
- 1 pinch of Hing
- 1 tbsp Oil
- 5-6 Drops Cooking Spray (if you don't have spray you can substitute it with one additional spoon of cooking oil)
- 2 cups Boiling Water

- Boil 2 cups of water in a kettle or in a vessel
- Clean the Broccoli and remove the thick stalks, separate the florets roughly
- Pour boiling water over Broccoli pieces
- Drain the water immediately. Use a kitchen towel and slightly wipe the excess moisture from the broccoli
- Take a wide vessel add Broccoli pieces, besan, rice flour, turmeric, salt, chilli powder and 1 tbsp Oil
- Mix everything together. Ensure that the Besan+Rice flour mixture is coated evenly on the florets
- Preheat oven at 180c
- Place Aluminium Foil on the baking tray and arrange the broccoli pieces
- Make sure they are not too crowded
- Now take the Oil Spray and spray them on the broccoli pieces
- If you don't have spray then use a spoon and drizzle some oil on top of the florets
- Bake them in 180c for around 20-25 minutes
- By keeping the temperature at this range I felt the pakods turn out in a lovely golden brown color
- At around 15 minutes you can even turn the sides of broccoli florets that aren't still crispy enough
- Once see you the golden crunch on the Broccoli pieces turn off the oven and serve them as a snack or side dish to Rice/Roti
