Kozhukattai/Kozhakkatai is nothing but Rice Flour Dumplings that is one of the most common Prashad offered to Lord Ganesha. Be it the yearly Pillaiyar Chadurthi feetival or be it monthy SankataHara Chadhurthi my mom makes it a point to prepare these kozhukattais once in a while. Apart from spiritual signifance kozhukattais are popular snack in TamilNadu. From Pidi Kozhukattai to Poorna Kozhukkattai (Dumplings with coconut+jaggery filling) there are various different ways im which we prepare these dumplings
These Rice flour dough dumplings can be steamed separately too without any fillings. The plain sauteed dumpling is called as Ammini Kozhukattai. My mom makes it a point to save atleast 1/4 th portion of the dough to make these cute little bombs. Now that A is growing and she constantly asks for snack am preparing this Ammini Kozhukattais more often. It is filling and you can add spices of your choice. Though the process look elaborate trust me they taste really good and it will be worth all the effort

- 1 cup rice flour I use store bought rice flour. Homemade Rice flour works very well too
- 2.5 cups Hot water
- 1 tbsp sesame oil
- 1/2 tsp salt
- For Tadka
- 1 tsp Mustard Seeds
- 1 tsp Urad dal seeds
- 1 tsp Channa Dal
- 2 Dried Red Chillies Instead of RedChillies you can also use Turmeric Powder+Chilli Powder
- 1/2 tbsp Oil
- 1/2 tsp salt, hing
- Few Curry leaves
- 1/2 cup Grated Coconut
- 1 tsp Channa Dal
- 2 Dried Red Chillies
- 1/2 tbsp Oil
- 1/2 tsp salt
- Few Curry leaves
- 1/2 cup Grated Coconut

- Boil water in a kettle and keep it ready
- In a frying pan add 1/2 tsp oil, salt and roast rice flour for 2-3 minutes in a low flame
- Once you smell a nice aroma turn off the flame. The reason to turn off the flame is the moment you add hot water to flour it will start forming lumps. On top of it when the heat is on the dough will become very lumpy.
- Add the hot water little by little and keep stirring
- Now turn on the flame and let the dough gets cooked. Also don't stop stirring 😉
- You can see the dough getting cooked and it all comes together in approximately 6-7 minutes
- Turn off the stove, remove dough from heat
- Apply oil in your palms and start shaping the dough
- Place the small dough balls in the steamer and steam for 10 minutes (if you have shaped into smaller balls it will take slightly lesser time. So keep an eye)
- Heat oil in a pan and add mustard seeds, curry leaves. Let it splutter
- Add Urad dal, Channa Dal, red chillies and saute well
- Add salt,hing and the kozhukattais
- Add grated coconut and mix everything together
- Tasty Ammini Kozhukattais are ready to be served
