I don’t like to waste food. If there are any leftovers I would happily reuse it as it is or would add some extra touches to it and completey make a new dish out of it. If there is Rasam leftover I usually pressure cook Moongdal or Toordal and add rasam to it along with onion, green chillies etc. Will serve that alongside Chapati or Poori. When there is any gravy (chole, paneer, tofu, mushroom) leftover, I serve it as breakfast the next day along with some bread toast. The list goes on 😉 😉
For this baby potato biryani I used Leftover KaaraChutney (Spicy red chutney) while preparing the base masala. You can replace the chutney with Tomato Puree (grind 3 tomatoes with few ginger garlic pieces) + extra chilli powder based on your preference

- 1 cup cooked rice I used Ponni. You can substitute with Basmati if you want
- 250 gms Baby Potato
- 1 onion
- 1 green chilli
- 1 Bay leaf
- 2 small cloves
- 1/4 inch Cinnamon stick
- 1/2 tsp Jeera Seeds
- 1 cup Kaara chutney or Red Chutney You can substitue it with Tomato Puree from 3 tomatoes+few pieces of ginger garlic & add extra 1/2 tsp Chilli Powder
- 1/2 tsp RedChilli Powder
- 1/2 tsp Coriander Powder
- 1/2 tsp Garam Masala Powder
- 1/2 cup yogurt
- 1 tbsp ghee
- Few Curry leaves

Instructions
- Pressure cook BabyPotatoes for 4 whistles. Peel the skin and keep it aside
- Heat ghee in a wide bottomed vessel
- Add Bayleaf, cinnamon sticks, cloves and elaichi
- Saute for a minute
- Add Onions, slit green chilli, curry leaves and saute until onions become brown in color
- Add salt, baby potatoes.Give it a mix
- Now is the time to add kaara chutney and other dry spice powders. Gently mix everything together
- Add yogurt and 1/2 cup water. Simmer the flame
- Let the potatoes absorb the flavors for 4-5 minutes
- Add rice and mix gently. Ensure potatoes arent getting mashed
- Adjust salt and garnish with mint & coriander leaves
- Turn off the flame and close the pan
- After 10 minutes serve this delicious Briyani with Raita 😁
