It is popular gravy of North India. Malai Kofta is a sweeter version of this. You are basically making a vegetable balls, deep fry them and add them to a gravy. I used all the available vegetables at my house. You can add veggies of your choice. Potatoes can be replaces by sweet potatoes or yam too.

Ingredients for making Kofta/Veg Balls :
Potato – 4.
Cauliflower – 10 florets.
Carrot – 2.
French Beans – 4.
Peas – 50gms.
Chopped cabbage – 1/2 cup.
Cashewnuts – 10.
Salt – 1/2 tsp.
Turmeric – 1/2 tsp.
Chilli Powder – 1/2 tbsp.
Garam Masala – 1/2 tbsp.
Corn Flour – 2 tbsp.
Bread Crumbs – 2 cups.
Water.
Oil for frying.
Method of Preparation:
Boil potatoes and keep them aside.
Chop carrots,cauliflower,beans,cabbage finely.Pressure cook the veggies along with peas.
Mash together all the veggies along with potatoes. Add all the dry powders to this mixture.
Mix cashewnuts too.Make small lemon sized balls from the mixture.
Make a paste of corn flour and water with little salt in it.
Dip the balls in corn paste and roll them in bread crumbs,deep fry them in oil.
Koftas are ready. Lets move onto gravy.

Onion – 2.
Tomato – 4.
Green Chilli – 1.
Chopped Spring Onions – 1/2 cup.
Chopped Ginger garlic – 1 tbsp.
Salt – 1/2 tsp.
Coriander Powder – 1/2 tbsp.
Jeera Powder – 1/2 tbsp.
Chilli Powder – 1/2 tbsp.
Garam Masala – 1/2 tbsp.
Amchur Powder (dry mango powder) – 1tsp.
Cashew nuts – 5.
Warm Milk – 2 tbsp.
Fresh Cream – 2 tbsp.
Coriander leaves for garnishing.
Mustard seeds, Jeera seeds – 1/2 tbsp each.
Method of Preparation :
Grind cashews and milk together and make it a paste. Keep aside.
Boil water and add tomatoes in it.Peel off the skin and grind the tomatoes along with green chilli.
Heat oil in a kadai.Add chopped onions, spring onions, salt.
Saute for about a minute or two.Add tomato puree along with turmeric.
Add little water and let the mixture boil until the raw tomato smell disappears.You can also use store bought tomato puree instead.
Then add all the dry powders, some water to the kadai.Now add cashew paste to the gravy. Let it thicken.
Mix deep fried koftas to this gravy.
Garnish the gravy with fresh cream and coriander leaves before serving.
Koftas are fantastic side dish gravy for Rotis/Chapathi, Poori, Fried Rice or Pulao
P.S :
While preparing Kofta you can even add grated paneer to the veg mixture and deep fry them. It gives a different taste,flavor to the normal vegetable balls.
