The schezwan sauce is the main ingredient for preparing schezwan fried rice. This sauce is readily available in stores or you can prepare at home all by yourselves. It requires very few ingredients. I prefer making the sauce at home rather than using a store bought one. Adjust seasoning according to your taste. Incase if you like your rice to be less spicier then reduce the number of chillis used while making the sauce. Also care should be taken while adding Soy sauce. A little too much of this sauce would completely change the taste and color of the fried rice.
Ingredients for Sauce :
- Red Chillis – 12
- Soy Sauce – 1/2 tbsp
- Vinegar – 1/2 tbsp
- Ginger (grated) – 1 tbsp
- Garlic (grated) – 3 tbsp
- Vegetable Oil – 1 tbsp
- Salt – 1/4 tbsp
- White Pepper Powder – 1/2 tbsp.
Method of Preparation :
- In warm water soak dried red chillis for about 1 hour
- Deseed them and grind to a smooth paste
- Heat oil in a non-stick frying pan
- Add ginger, garlic and sauté until the raw smell goes off
- Now add this red chilli paste, salt, white pepper powder and few drops of water
- Continue sautéing until you see the mixture separates from oil
- Finally add vinegar and soy sauce.Let it boil for about 2 minutes
- Schezwan sauce is ready.
Ingredients for Fried Rice :
- A bowl of finely chopped vegetables
- Spring onions (green part) for garnishing
- Schezwan sauce – 3 tbsp
- Basmati Rice – 200gms
- Oil – 2 tbsp
- Salt – 1/2 tbsp.
Method of Preparation :
- Cook basmati rice according to package instructions.Let it cool.
- Chop all these vegetables (onion, cabbage, colored capsicums, carrots, fresh peas and French beans) finely.
- You can use your own choice of vegetables. Incorporating as many veggies as possible will enhance the taste of this rice.
- Heat oil in a non-stick frying pan.
- Add all the vegetables. Sprinkle salt and water. Wait until they are 3/4th cooked.
- Do not over cook the veggies.Add 3 tbsp. of schezwan sauce. Let the sauce mix completely with vegetables.
- Now add rice and using a fork mix them all well.
- Garnish with spring onions. Serve this rice with Gobi Manchurian or Chilli Paneer or with any gravy of your choice 🙂
