One of the easiest breakfast recipes for Toddlers. A great way to add fruits to their diet and these pancakes are perfect for Lunchbox & Snack box too.
Clean the strawberries and puree them in a mixie.Do t add water. Keep that aside
Mix flour, baking soda, baking powder, cinnamon and jaggery powder together
Slowly add milk and water. Use a wire whisk or your hand to mix batter, ensure it is lump free
Add Strawberry puree and give it a mix
Finally add Vanilla essence and let the batter rest for 15 minutes
Heat some butter in a pan and once it is hot pour the batter
Let the pancake gets cooked on one side and slowly flip it and wait for a minute or two
Once it is cooked thoroughly remove from the pan and repeat the process
A loves Ghee and I just spread it on top of Hot Pancakes and fed her. However if you have Maple Syurp or Chocolate Suryp handy you could serve them too along with Pancakes
Recipe Notes
Don’t make the batter too runny. It will be difficult to flip
Controlling the temperature of your hob is really important. If its too hot the outer layer will get browned soon leaving a dense, under cooked inside
Coat the pan with butter everytime you make it. Since I used a non-stic Tawa, the pancakes didnt get stuck in the pan. If you are using CastIron pans season them accordingly before making a Pancake
If you are planning to add other fruit purees such as Banana or Apple ensure the pancakes are cooked for a slightly longer time
Instead of WholeWheat flour you can use Self Rising flour or All Purpose white flour too.
Add cinnamon powder is optional. If you dont have it substitute with Cardamom Powder
