Vegetable Briyani
Sunday lunch could be even more special with ‘Briyani’.I wanted to post this recipe for a long time but never managed to click step by step pictures of the preparation.However made that possible during this weekend.The following measurement serves 4.Salt and spices can added or reduced according to

Instructions
Soak Basmati Rice in water for about half an hour. Chop onions and other vegetables length wise
Boil the vegetables and green peas in water or in Microwave until its 3/4 th done.Do not cook them completely.
Chop the tomatoes finely. In a bowl mix all the ‘Masala Ingredients’ with curd,a pinch of salt and along with this chopped tomatoes. Let the mixture be untouched for about 20 minutes.

Since I didn’t have a heavy bottomed vessel I used my Pressure Pan for cooking the rice.
Heat 1 tbsp of ghee in Pressure pan and add the ingredients mentioned under ‘Tadka’ section.
Let them splutter.Saute for about 2 minutes.
Now add Basmati rice to the pan and add 2 cups of water. (Ratio of rice : water is 1 : 2). In case if you are using ordinary rice you can use 3 cups of water.
Add a pinch of salt to the rice and close the pan. Do not have to put cooker weight.Just leave it as it is for about 12-15 minutes.
When you get the nice aroma of rice you can turn off the stove and let the pan be closed until we are ready with other things.
Heat 1/4 tbsp of ghee in a frying pan. Saute only onions until they become translucent. Keep them aside.
In the same pan heat the remaining amount of ghee.Add jeera,mustard and curry leaves.
Let them Splutter.Now add the boiled vegetables and 1 tbsp of salt (approx)
Saute for about 2 minutes.
Now add the masala ingredients mixed with curd to the pan.
Mix vegetables and masala completely. Add 1/2 cup of water.
Let this whole mixture boil for about 4-5 minutes.Add mint leaves and corrainder.
Once the water is completely absorbed mix the cooked basmati rice,fried onions and this masala gravy.

Yummy Briyani is ready to be served with Raita.

In a bowl add grated cucumber and grated onions together.
You can also add grated carrot if you want.
Add 1/2 cup of curd and 2 tbsp of water.
Mix well by adding salt. Prepare this few minutes before serving. You may also add Soya Meal maker,fried bread pieces and cashew nuts at the end.It will add a nice flavor to Briyani.
