Stuffed Capsicum
Very easy to make and you can prepare it as a starter or as side dish for Briyani / Fried Rice. The stuffing inside capsicum is your choice. I did a normal potato stuffing however you can try Paneer, Tofu based too.

Ingredients

Garam Masala

Instructions
Boil potatoes mash it and keep it aside
Chop onions, tomato, carrots finely
Heat 1/2 tbsp of oil in a frying pan and add mustard seeds, saunf
Let them splutter. Add curry leaves, ginger garlic paste, chopped vegetables
Sautxe9 for about 3-4 minutes.Add salt, turmeric powder, chilli powder, garam masala powder and close the pan with lid
Let the vegetables get cooked and later add mashed potatoes.Adjust salt according to your taste. The stuffing is ready
Cleaning Capsicum :
Just remove tip of capsicum and cut capsicum into halves two
Deseed it completely
Brush outer capsicum with oil portion
Leave it aside for about ten minutes
Non Microwave method :
Hold capsicum using fork and directly keep them in flame by rotating occasionally
Once the outer layer is cooked, keep the stuffing inside and sprinkle grated cheese on top
Keep the capsicums filled with stuffing inside a pan and wait until the cheese melts
Now serve the stuffed capsicum
Microwave Method :
In a microwave safe plate arrange the capsicums with filling inside
Microwave for about 10 minutes.Once you notice the skin of capsicum is cooked gently sprinkle the cheese on top of it
Keep it in microwave for a minute or until cheese melts two
Stuffed Capsicums are ready to be served
