2dried red chilliwe have already added one Red Chilli while making spice powder and we have added black peppercorns too..In case if you want a really spicy pulikachal mix you can add more chillies instead of 2 🙂
1tablespoonRoasted Peanutsi didn’t have peanuts while preparing it so it is not in the prep pictures but do add peanuts for that extra crunch in the rice
Soak Tamarind in 2 cups of warm water for 15 minutes and extract Pulp
Heat 2 tablespoon Sesame Oil in a pan
Add Dried Red Chilli,Peanuts (if you have) and Hing
Continue sauteing for few seconds
Add Tamarind Pulp,salt, turmeric and let it boil in medium flame
In the meantime lets prepare the spice powder
Heat little oil in a pan and roast all the ingredients mentioned under ‘Spice Powder’ section
Once it is cooled down prepare powder using a mixie
Now add this spice powder to the boiling tamarind water
Mix everything together and let it boil for another 5-7 minutes
You can see the paste becoming thick
At this stage add half a tablespoon of sesame oil. Give it a mix and let it boil for another 2-3 minutes
Thick Pulikachal Paste is now ready
Let the paste cool down for few minutes and now add cooked rice. Make sure the rice is not too hot. Hot rice might get mashed when we try to mix
Use a fork and mix everything well
At this stage add Turmeric Powder, Black Pepper Powder, remaining half tablespoon oil and some fresh curry leaves (if you have). Mix everything together
Adjust salt
