Instructions
Pressure cook Rice and leave the rice to cool down
Heat Ghee in a wide bottomed vessel.
Add Bayleaf,cinnamon stick,clove & elaichi
Saute for a minute. Add Saunf,Mustard Seeds.

Add Green Chilli,ginger garlic pieces. Continue sauteing for a minute. Fresh ginger & garlic is much more flavorful than paste
Once the garlic turns mildly brown add finely chopped onions & tomatoes
Saute it for upto 3-4 minutes
Now add the chopped mushrooms and all dry powders
In low flame keep sauteing the mushrooms
It releases water and the spice mixture will get cooked in approximately ten minutes

The mushroom mixture will turn to dark brown color, at this stage add cooked white rice
Using a fork mix everything well
At last add dried methi leaves or you can even add fresh herbs like coriander leaves,mint leaves
Adjust salt and serve this biryani with raita of your choice
