In a pressure cooker or in an Instant Pot cook the soaked Peas along with cubed Potatoes until they are mushy. I cooked in IP for 25 minutes.
While it is getting ready we can prep the masala that needs to be added to the cooked Peas
Heat 2 tsp Oil in a pan and add all the whole spices. Then add the cubed onions and roughly chopped tomatoes
Add 1 tsp salt, Ginger garlic paste, 1 slit Green chilli, coriander + mint leaves, dry spice powders like kashmiri chilli powder, coriander powder, garam masala and saute everything well. Let them cooked in low heat. Don’t add water
Within 6-7 minutes you could see the onions and tomatoes are almost cooked. At this stage remove the pan from heat and let it cool down for few minutes
Grind this to a smooth paste and add it to the cooked green peas + potato mixture
Mix everything together. Add a pinch of Amchur Powder and 1 tsp Channa Masala Powder. This step is optional however i felt this gave that nice tanginess to the Green Peas masala
Add 2 cups of water, adjust salt and let the whole mixture boil for 5-10 minutes in low heat. Keep stirring in between so that the gravy don’t get burnt
Remove the Green peas gravy from heat and you can start preparing the next set of ingredients to assemble the Poori
Salad and Poori
Mix all the ingredients mentioned ubder salad section. Adjust salt and spice based on your preference
I used my Airfryer to fry the Pooris. They turned out great without even using a drop of oil. At 180c fry them for 3 minutes or until the pooris are golden brown. You can check the output in insta reel 😁
Assembling Masala Poori
Crush 4-6 pooris in a plate
Pour the hot green peas gravy
Add the salad topping
Sprinkle Sev generously. Masala Poori is ready to be served
Alternately you can also add chaat masala powder/Tamarind chutney/Yogurt if you want in the toppings.
