Eggless Sponge Cake / Vanilla Sponge Cake
To get rid off midweek blues thought of baking a cake yesterday evening. I wanted to bake something eggless and since we don’t have much of a sweet tooth settled for a simple sponge cake. You won’t believe it exactly took 10 minutes to prep the batter for the cake. 20 minutes for baking and hence I

Ingredients
Instructions
  1. Sift all the dry ingredients together and keep it aside. If you are adding cinnamon or any spice powder add them while sifting.
  2. Melt butter and let it cool for sometime.
  3. In a wide bowl mix condensed milk and milk. Whisk continuously.
  4. Add vanilla essence, butter and oil to this mixture.
  5. Continue whisking for 2 minutes and ensure there are no lumps.
  6. Now add in the dry powder to wet ingredients and start mixing.
  7. If you feel the mixture is thick then add some milk.
  8. Cake batter is ready now. Grease the cake mould with some melted butter.
  9. Preheat oven at 180c and bake the cake until tooth pick inserted comes clean
  10. Since I use gasoven I baked them at gas mark 4 for approximately 15-17 minutes.
  11. Serve it hot along with tea or juice.
