Couscous & Grilled Tofu salad
Instructions
In a wide bowl mix all the ingredients mentioned under ‘For Marinade’ section
Keep a tbsp of this mixture separately
Cut Tofu into rectangle shaped thick pieces and marinate them in the mixture. Make sure the Tofu is well covered with all the spices,herbs
Refrigerate for 30 minutes
In the meantime, boil 1 cup of water in a sauce pan and add a pinch of salt,oil
Once they come to rolling boil, add in couscous and turn off the flame.
Close the pan with a lid. Let it get cooked covered for 10 minutes
Chop all the vegetable finely and mix everything together along with a pinch of salt
Once the couscous is cooled down, add in to the veggies mixture along with the remaining marinade
Heat a grill pan and grill the Tofu pieces on both sides
Place the hot grilled Tofu on top of couscous mixture
Healthy, vegan salad is ready to be served. You can squeeze some extra lime juice if you want.
