Instant Pot Corn Chowder
Corn Chowder prepared in Instant Pot within 15 minutes. Tastes so good and perfect for light hearty dinners. You can serve this as an Entree too. I have nutritional yeast instead of Plain flour to thicken the soup and to add cheesy nutty flavor

  1. Turn on Saute Mode in Instant Pot
  2. Add Oil. Once it is hot add finely chopped onions,ginger and garlic
  3. Saute for a minute. Then add chopped Potatoes and a cup of Sweet Corn
  4. Add salt,pepper powder,dried Parsely. Mix everything together.
  5. Make sure to deglaze the pot by adding litte water if needed
  6. Then add half cup of water
  7. Turn off ‘Saute’ mode and turn on ‘Pressure Cook’ mode and ensure the setting ‘High Pressure’ is turned On
  8. Set the timer to ‘8’ and once the timer is off manually release pressure after 3 to 4 minutes
  9. Now turn on ‘Saute’ mode and add a cup of milk & 2 tablespoon Nutritional Yeast
  10. Keep stirring the mixture and let it boil for 3-4 minutes until the Chowder reaches thick creamy consistency. If you want you can add extra milk too
  11. If you want you can blend the soup. I didn’t blend it. I loved eating the chunks of sweet corn & perfectly cooked potatoes
  12. Adjust salt. Garnish the Corn Chowder with Spring Onions or any fresh herbs
Recipe Notes

1. If you are preparing this directly in Pressure Cooker make sure to add enough water so that the corn & potato don’t get burned 

2. If you are using All Purpose Flour & Milk to thicken the soup then first mix the two well and then add it to Pressure Cooker or Instant Pot. This way flour don’t become lumpy
