Capsicum Bath
Very easy to prepare lunchbox recipe. Simple yet flavorful. The freshly ground spice mix adds such a lovely taste to this dish

Instructions
Dry roast all the ingredients mentioned under ‘Spice Powder’ section and grind them to coarse powder. You don’t have to add oil while roasting
Pressure cook Rice upto 4 whistles and let it cool down completely
Chop capsicum, onion into medium sized pieces. Chop tomato finely
Heat oil in a non-stick pan add mustard, urad dal,jeera & curry leaves
Let them splutter. Add peanuts and saute for a minute
Add chopped veggies and continue sauteing
Add salt, turmeric, hing and turn the flame low
Do not add water. It will make the rice soggy
Within 5-8 minutes the veggies will start shrinking. At this stage add the freshly ground spice powder
Give it a mix. Once the raw smell of powder goes off, start mixing cooked rice
Use a fork and make sure rice is completely mixed with capsicum & spices
Adjust salt and serve the rice with Raita & frymes
This delicious Capsicum Bath can be packed for train journeys, weekend outings too.
Notes :
Alternatively you can also add Coconut & Peanuts while roasting the spice powder. I have prepared a version of this Capsicum Bath today (14-May-2020) with these two ingredients added to the spice mixture. It turned out delicious too.
