Wash beetroot well and peel off the skin. Chop them into larger cubes
Pressure cook beetroot cubes for exactly 2 whistles
Once the pressure cooked beetroots drain the water and slightly remove moisture by place it on tea towel. Once they are cooled down grate them using a grater and keep them aside
Heat 1/4 teaspoon oil in a pan. Then add finely chopped onion and grated ginger. Saute for a minute and then add frozen peas. Turn off the heat
Take a wide bowl. Crumble the tofu, add grated beetroot, flax seeds powder, sauteed onion+ginger+green peas, salt and other dry spice powders
At last add bread crumbs. Mix everything together
The mixture will look like this
Shape them into small discs/Tikkis
Heat oil in a pan and pan fry the pieces
Let the heat be medium. Cook atleast 4 minutes on each side
Until you get the crispy coating on both the sides
Serve this delicious Beetroot Tofu tikki as a snack or you can even have it with Burger Buns.
I served the tikkis on a bed of Rocket leaves, added finely chopped onions and tomatoes, sprinkled some toasted sesame seeds & a tablespoon of greek yogurt with dried parsely as a dip
