7cups Burfi
In TN Deepavali is incomplete without Jamuns and Burfis. This 7cup Burfi is a delicious sweet prepared from Besan and Coconut.

Instructions
Heat 1/4 teaspoon Ghee in a thick bottomed vessel
Add 1 cup of besan. Keep the flame in medium heat and then saute for just 2 minutes
Don’t let it brown. This step is only to remove raw smell of Besan/கடலை மாவு
Add 3 cups of sugar. Keep stirring
Add a cup of coconut next
Then ghee & milk. Mix everything well
If you have a wire whisk keep whisking it to remove any lumps. Or you can use the back of your spatula and keep stirring, pressing the mixture to keep the lumps away
Initially the mixture will look watery. Don’t worry. Keep Stirring
After approximately 7-8 minutes you will see the burfi mixture coming together
Keep stirring. Make sure to keep scraping the sides, bottom of the pan too
After another 5 minutes the burfi mixture will look like this
Add cardamom powder & keep stirring for few more minutes until you see the bubbles reduce on the sides and also the whole mixture will come to together like a dough
At this stage transfer the 7cup Burfi mix to the greased plate
You can see the Burfi setting immediately within 3-5 minutes
Use a knife and start shaping them
After drawing vertical & horizontal lines wait for another minutes. Once the top layer becomes dry you can slowly take off pieces from the plate
Also you don’t have to keep in refrigerator to set the Burfi. Normal room temperature is fine for them to cool down. Carefully remove the pieces without breaking them
Since I added desiccated coconut you can see some bumpy texture on the burfis. If you are using regular fresh coconut the burfis will be smooth
Delicious 7cups Burfi is ready. Perfect sweet that can be distributed to our family & friends. This is how the burfis looked in natural light. All the other above pics were taken in kitchen today morning.
