On a Friday night I was wondering what to make for dinner. Then this idea popped up. Prepared a quick tikki with Potatoes and paneer,served with a simple home made green chutney, store bought Imli(tamarind) Chutney and a salad. It was a satisfying meal and a perfect start for the weekend. Instead of Paneer you could add Tofu too. Since these tikkis are shallow fried they didn’t consume too much oil too. The following measurement yields upto 12-15 medium sized tikkis
Ingredients For Chutney
1 Bunch Coriander Leaves
1/4 cup coconut
1 Green Chilli
1/2 tbsp finely chopped ginger,garlic
1/2 tsp salt
1 Tomato
Steps
- Grind all the above the ingredients together
- Add little water depending on the consistency you need
- Adjust salt and serve this chutney with tikkis
Ingredients for Salad
1 Carrot
1 Radish
1 Onion
1/2 tbsp Lime Juice
1/2 tsp salt
1/2 tsp Pepper Powder
Steps
- Grate carrot and radish
- Finely chop the onions
- Add lemon juce,salt and pepper powder
- Give it a mix and serve them as a side salad for your meal
Ingredients for Tikkis
200 gms Paneer
3 Boiled Potatoes
1/4 cup Frozen Peas
1 Onion
1/2 tbsp Salt
1/2 tsp Turmeric
1/2 tbsp Corainder Powder
1/2 tbsp Garam Masala Powder
1/2 tsp chilli Powder
1 cup Panko Bread Crumbs
Coriander Leaves
Oil for shallow frying
Steps
- Grate Paneer using a grater
,mash the potatoes and in a wide bowl mix them both together - Heat a tsp of oil in a non-stick pan and finely add chopped onion
- Add salt,turmeric,chilli powder,coriander powder one by one
- Saute the onions until raw smell goes off
- Add these masala onions to Potato Paneer mixture
- At last add frozen peas
- Divide them into 12 equal sized portions. Form tikkis and coat them on bread crumbs
- Store the tikkis in fridge for 10-15 minutes. This will ensure that the spices are blended well with potato and paneer
- Heat 2 tbsp Oil in a non-stick frying pan and place the tikkis
- Wait until one side turns golden brown
- Turn over to other and wait until the tikkis get cooked
- When both sides are cooked, remove them from pan and serve them with chutney or sauces of your choice
