This is one of the most popular breakfasts in Chennai and in other parts of TN as well. Very simple yet filling breakfast.The preparation might take around 15 minutes.
Ingredients for Poori :
Wheat Flour – 200gms.
Maida – 2 tbsp.
Salt – 1/4 tbsp.
Ghee – 1/4 tbsp.
Oil for frying.
Method of Preparation :
Mix wheat flour, maida, salt with ghee.Add warm water and knead the flour mixture until it forms a smooth dough.
Leave it aside for 15 minutes. Close the dough with a cloth. Make sure the top of doesn’t get dried up.
Then make small balls from dough and using rolling pin roll it to pooris.
The pooris has to be rolled slightly thick and this results in puffed up pooris
Heat oil in a frying pan and fry one poori at a time. Using the ladle(karandi) press them in oil. This will help in puffing up the poori
Pooris are ready to be served.
Ingredients for Potato Masala :
Potatoes – 3.
Onions – 2.
Chopped Ginger – 1/2 tbsp.
Garlic – 4-5 pods.
Green Chillies – 3.
Salt – 1/4 tbsp.
Oil – 1 tbsp.
Turmeric – 1/2 tbsp.
Mustard Seeds, Urad Dal, Channa Dal – 1/4 tbsp each.
Curry Leaves – few.
Method of Preparation :
Boil potatoes, mash them and keep it separately.
Heat oil in a pan and add mustard seeds,urad dal,channa dal.
Let them splutter.
Now add curry leaves,ginger,garlic,onions and turmeric powder.
Saute until onions become translucent.
Add salt and mashed potatoes.
Keep stirring for a minute.
Add little water and let the whole mixture boil for about a minute or two.
Remove from the flame and serve it with hot pooris/chappathi.
