The one street food that I(many) can’t resist is Panipuri. Though TN is famous for evening snacks especially those roadside Tea Kadai Bhajjis,masal vadais, now-a-days we could spot more PaniPuri vendors too in street corners.Since I didn’t have the time to prepare those cute little Puris,went to Nilgiris super market and got a ready made pack.Prepared ‘Pani’ and other stuffings according to our taste.
Ingredients*for*Pani :
- Mint leaves – 1 cup
- Coriander leaves – 1/2 cup
- Green Chillies – 2
- Tamarind pulp – 1/4 cup
- Ginger – a small piece
- Jeera Powder – 1/4 tbsp
- Amchur/Dry Mango Powder – 1/4 tbsp
- Chaat Powder – 1/2 tbsp
- Water – 2 cups
- Lemon Juice – 1 tbsp
- Salt to taste
For Filling :
- Boiled Potatoes – 1
- Chilli Powder – 1/4 tbsp
- Chaat Powder – 1/4 tbsp
- Salt to taste
- Chopped Onions – 1/2 cup
Method of Preparation :
Wash,clean mint and coriander leaves thoroughly
Grind ginger,mint leaves,coriander leaves.
Add tamarind pulp to this mixture.
Now in a vessel take two cups of water and add the above mixture.
Add jeera,amchur,chaat powder along with salt.
At the end add few drops of lime juice to this and chill it in refrigerator for atl east an hour.
Mash the boiled potatoes along with chilli powder,salt and chaat powder. Keep it aside
Assembling the PaniPuri :
Take one Puri and slightly make a hole at the top. Fill it with mashed potato mix,some onions,corriander leaves,chaat powder(tomato,boiled chickpeas are optional and can be used according to your taste) and finally add the cold ‘Pani’. Place and the entire Puri in your mouth and eat it in one Go…You could feel the awesome combination of several flavors.
PS :
I didn’t prepare the dates chutney(sweet chutney) since we don’t like it much. In case if you like the taste then pressure cook dates and grind them with tamarind pulp,jaggery.
