
Last Friday was my DH’s birthday and thought of surprising him with some homemade cake. Since its only two of us I thought of making cupcakes. His favorite flavor is chocolate so I zeroed in on the flavor. I didn’t want to add too much of sugar or butter in it and I was looking for eggless recipe too. After going through few YouTube videos I finally came up with the below recipe.
This was the first cupcake I baked at home and it turned perfectly yum, with great texture, not over sweet. All you need is a whisk. I have used 2 tbsp. of vegetable oil in this recipe however you could replace it with 1tbsp melted butter + 1 tbsp. vegetable oil. Also I haven’t used equal quantities of flour sugar, hence the cakes won’t be too sweet. If you have a sweet tooth then you can very much add equal quantities of sugar.
Dry Ingredients :
- Plain flour/Self Raising flour/Maida – 1 cup
- Powdered Sugar – 1/2 cup
- Baking soda – 1 tsp
- Baking Powder – 1 tsp
- Dark Cocoa Powder – 2 tbsp
- Salt – a pinch
- Choco Chips (optional)
Wet Ingredients :
Milk – 1 cup + few extra drops (Add it later if you find the cake mix is too thick)
Vegetable Oil – 1/4 cup
Vanilla Extract – 2 tsp.
Lemon juice from one lemon (or 2 tsp of Apple cider Vinegar)
Instant Coffee – 1/2 cup [Add some warm water + a spoonful of instant coffee powder]. This gives an intense flavor to the cupcakes. If you are not a coffee lover then skip this step and add plain milk.

Method of Preparation :
Sift together flour, cocoa, baking soda, baking powder and salt.

In a wide bottomed pan or in a mixing bowl add powdered sugar and the flour mixture.
Mix together all the wet ingredients in a bowl and pour them over the dry mixture.
Slightly whisk them until they form a creamy texture.

Then add a pack of choco chips in the batter. This step is optional but it gives a nice crunch to the cupcakes.
Do not over mix.
In the baking pan place the cupcake cases.

Spoon in the mixture.

I have a gas oven here so preheated it at gas mark 4 for 20 minutes and baked for about 20 minutes.

You can preheat it to 180c and bake for 15-20 minutes.

PS :
The icing in the picture is a store bought one. Dr.Oetkers’ ready to swirl vanilla flavored icing and I topped it with some chocochips. Hence the icing recipe is not given here.
