CousCous is nothing but a variety of pasta that is being used extensively in North African and Middle eastern cuisine. This is my new found love after coming to London. It takes very less cooking time and can be prepared in different ways. From a humble salad to Upma,Pongal and many more south indian inspired dishes too.
How to cook a perfect grainy, fluffy couscous :
If you are using 1 cup of couscous you need approximately 1.5 cups of water. Not more than that.
First boil water with a pinch of salt and a tsp of oil.
After 5 minutes add couscous and close the pan for about 5 to 10 minutes.
Then use a fork (not spoon) and just mix the cooked couscous.
Keep this aside. You can store it in fridge and probably use it for upto 2 days.
For upma :
Heat 1 tbsp of oil in a pan.
Add mustard seeds,urad dal, jeera and curry leaves.
Let them splutter.
Add chopped green chilli, ginger and saute for a minute.
Then add in finely chopped veggies of your choice (onion,carrot,beans,tomato) with a pinch of salt, turmeric.
Sprinkle some water so that vegetables gets cooked. Do not add more water. This might make the coucous mushy. So add water carefully.
After 3-4 minutes add in the cooked couscous to the pan.
Mix everything together. Garnish with coriander leaves.
Easy breakfast recipe that can be prepared within 15 minutes. You can even prepare this as an evening snack for your kids.Couscous upma with masala chai will be a perfect breakfast combination
