Whenever I am running out of choices for dinner menu I would prefer making Parathas.The main reason is you can try a lot of new combinations with veggies.You don’t really have to worry about sidedish since plain curd,raitha or pickle goes well with them This time I tried making the stuffing with corn kernels instead of the usual Methi leaves or cauliflower stuffing.With the following measurements you can prepare 6 parathas approximately. The stuffing can be used as a spread while making bread sandwiches.
Ingredients for Dough :
- Wheat flour – 2 cups
- Maida – 1/2 cup
- Milk – 1 cup
- Salt – 1/2 tbsp
- Water – 1/4 cup
- Oil – 1 tbsp
For Corn Stuffing :
Frozen Cornkernels – 1 cup.
Small bunch of Pudina,coriander leaves.
Garlic Pods – 10.
Green Chillies – 3.
Salt – 1/2 tbsp.
Lemon juice – 1/2 tbsp (optional)
Prepatation :
In a large bowl mix wheat flour, maida and salt.
Add milk,water and knead the dough until its soft.
Close the bowl and keep it aside.
If you have Microwave oven you can cook cornkernels for about 3 minutes.
Or just boil water with a pinch of salt and cook them for about 5-6 minutes.
Grind the cooked corn,pudina,corriander leaves,garlic and green chillies into a paste.
Make lemon sized dough balls and roll two rotis.
Spread the corn paste evenly on one roti.
Place the other roti on this and close the sides.
Heat the tawa and cook it over medium flame using ghee or oil.
Serve with Raita and pickle.
