Krishna Sweets and A2B hotels serves the most delicious Polis in Chennai. Perfect evening snack. Very simple recipe but with loads of calories 😉 Ghee and oil should be used generously. The dough is basically same for both coconut dal poli. Only the stuffing differs. The following measurement serves around 4-5 small polis in each variety. Adjust measurements accordingly.
Ingredients for Dough :
- Maida – 250gms
- Salt – a pinch
- Turmeric Powder – a pinch
- Oil – 4 tbsps
- Water – for kneading the dough.
For Coconut filling (பூர்ணம்) :
- Shredded Coconut – 1 cup
- Jaggery – 3/4 cup
- Cardamom Powder – 1/2 tbsp
- Ghee – 2 tbsp.
For Dal filling :
- Channa Dal – 1 cup
- Jaggery – 1/2 cup
- Cardamom Powder – 1/2 tbsp
- Ghee – 2 tbsp.
Method of Preparation.
Dough :
- Sieve maida and add pinch of salt turmeric
- Mix it well. Add a tbsp of oil and water. Start kneading.
- The dough should be very smooth
- Form a small dent in the dough and pour 1 tbsp of oil. Close it with a lid and keep the dough aside for about 2-3 hrs.
Coconut filling :
- Heat 1/4 tbsp of ghee in a kadai
- Add shredded coconut. Saute until it becomes light golden colour
- Then add jaggery and cardamom powder.
- Keep sauteing for a minute or two. Do not add water.
- Jaggery starts melting and it will be mixed with coconut completely.
- Coconut poornam/filing is ready. This same filling is used while preparing Kozhukattais too.
Dal Filling :
- Soak channa dal in water for about 30 minutes
- Pressure cook dal up to 4 whistles
- Drain water and grind to a fine mixture
- Add 1/4 tbsp. of ghee in a kadai
- Add ground channa dal and sauté for a minute
- Now to this add jaggery powder, cardamom powder.
Channa dal filling is ready now.
Preparing Polis :
1.Divide dough into small balls.
2.Now apply a little bit of oil in plantain leaf or you can use a plain polythene sheet to roll poli.
3.Take a dough ball and stretch it with your fingers. Now place coconut filling or dal filling and close the dough.
4.Apply oil in your hands and start stretching the stuffed dough outwards. If you use rolling pin there are chances that filling might ooze outside.
5.Heat a non-stick dosa tawa.Pour 1/4 tbsp. of ghee.
6.Once the tawa is heated placed the rolled poli and drizzle oil/ghee on the edges.
7.Wait until one side is cooked.
Flip over the other side and let it be cooked for about a minute or two.
Polis are ready to be served.
