The idea of making soup from an apple might sound weird since we mostly use Apples in pies, smoothies, crumble recipes. Trust me this soup is such a comfort food during winters. The natural tart & crispiness in the Green Apples are perfectly balanced with our Indian spices. Moreover Green Apples are rich in antioxidants, dietry fibre and has various other health benefits. I haven’t removed the skin of these apples while cooking since the nutrients are present in their skin too. Marks & Spencer is our goto place to buy fresh fruits. These apples are from M&S too. The…

Beetroot Halwa
October 25, 2016Beetroot halwa is one of the easiest Indian sweet recipes that can be prepared during this festive season. If you are a newbie in kitchen and scared to try Burfi, Mysorepak etc then make this rich, colorful halwa and trust me you can never go wrong with this recipe. All you need is beets, milk and sugar. It takes anywhere between 45-60 mminutes for preparation. The following measurement makes approximately two whole ramekins of halwa as shown in the picture below. It was sufficient for the two of us. Kindly increase quantity if you are preparing for a larger group…

Paneer Kalakand | Sweets using Condensed Milk | Paneer Recipes
October 22, 2016Next on deepavali recipe collection is this quick Paneer Kalakand that can be prepared easily without any fuzz. Paneer & condensed milk are the two main ingredients required for this dish. Me and my husband love paneer a lot and instead of using it only in gravies and in savory recipes, I tried this Kalakand for a change and it came out really well. If you are using store bought paneer, kindly soak the slab of paneer in water for atleast 30 minutes. Remove water and use a kitchen towel, squeeze extra water from Paneer. This step ensures you have…

Eggless Chocolate Cake using Condensed Milk
September 19, 2016As most of us say baking is therapeutic & all that jazz but at the same time it is stressful too atleast for me 😉 Each & every step is crucial from ingredient measurement to oven temperature etc.So many factors has to be right to get that perfect output. Be it baking a cake or any other savory bakes you need patience. I obviously lack it & its funny how much ever I try to control myself , I tend to open the oven door a million times to check if everything is baking fine Few months back I…

Mix Vegetable Dry Curry
August 10, 2016This is my go-to recipe when I want to make a simple side dish for Rice/Roti/Poori. I usually mix these veggies together (Onion,Carrot,French Beans,Potato,Tomato,Capsicum,Cauliflower/Broccoli).They all make a fantastic combo. You can even add Cabbage,Spinach or any other greens too to make it even more healthier. Such a simple recipe but tastes absolutely delicious. Since I love crunch in the curry, I don’t add too much of water while cooking the vegetables. Since they will soften the texture. Just sprinkle few drops of water while cooking the veggies. The following measurement serves two. Adjust quantity accordingly

Mushroom Biryani
June 8, 2016This is an instant biryani version. With less spices & ingredients the biryani can be prepared within 25 minutes. Mushrooms need very less time to get cooked and hence this recipe comes handy on busy weekdays. I used button mushrooms. Also I added only onion, tomato along with mushrooms. Didn’t want to add too much of veggies. I truely wanted mushroom to be the hero of this dish. You can serve this biryani with raita or any other gravy of your choice. I prepared strawberry raita. It tasted delicious. The tangy, sour raita with spicy biryani made an awesome combo. Do try…

Tawa Pulao
June 3, 2016Our dinners are usually Roti with a simple sabzi or sometimes I go the South Indian way and prepare Upma/Dosai. Its June and is supposed to be the start of Summer season here in UK. But the weather has been crazily cold for the past few days. All we crave is spicy, greasy foods. Yesterday night I prepared this spicy Tawa Pulao for dinner and it turned about absolutely delicious. I served it with Yogurt and crisps. The authentic street food version is prepared directly on the hot Tawa and the addition of Pav Bhaji masala takes this Pulao to…

Couscous & Grilled Tofu salad
May 19, 2016Couscous is one of my favorite ingredients and am incorporating it in many Indian based recipes too. This salad can be put together within few minutes and its vegan too. Instead of Tofu you could also add grilled halloumi or paneer too incase if you are not a vegan I have used only basic ingredients for preparing the marinade. The salad can be served cold as well. Hence you could prepare the Couscous mixture well in advance and can refrigerate for later use. Grill the Tofu just before serving

Poondu Kuzhambu (Spicy Garlic Curry)
May 14, 2016Pulikuzhambu, Kara Kuzhambu, Poondu Kuzhambu these are all various varieties of thick tamarind based curries that are most popular in Tamilnadu apart from the usual Sambar & Rasam. The consistency is the key to make a perfect poondu kuzhambu. Recently I brought around 1/4 kg of fresh garlic from farmer’s market nearby and was waiting for weekend to make the gravy. After painstakingly peeling 2 whole bulbs of garlic I looked around the pantry and realized there was no Tamarind. Tamarind pulp is an essential ingredient to this curry because it gives the right tanginess to the gravy. I blindly…
