Got a fresh broccoli yesterday and thought of making soup or stir fry with that. But suddenly today morning decided to prepare stuffed parathas using broccoli. Made them for first time but they turned out great. Super soft,filling, less ingredients and you don’t have to make a separate sidedish. Since they go well with Curd pickle. From the following measurement you will get around 6-7 parathas. I have used green chillies to add spiciness to the filling. However you can substitute with red chilli powder.
Ingredients for dough :
- Wheat flour – 2 cups
- Ghee – 2 tbsp
- Warm water – 2 cups
- Salt as required
For Filling :
- Broccoli – 12-15 florets
- Green chillis – 2
- Chopped Ginger,garlic – 1 tbsp each
- Chopped coriander leaves – 1 tbsp
- Oil – 1/2 tbsp
- Jeera – 1/2 tbsp
- Mustard – 1/2 tbsp
Method of Preparation :
Sieve flour and add salt,ghee.
Mix them and start adding warm water slowly.
Make a pilable smooth dough. Close the dough in a damp tea towel.
Let it rest for about 30 minutes.
Wash and clean broccoli florets.
Grind broccoli,chilli,coriander,ginger garlic to a coarse mixture.
You can food processor or the normal mixie. Heat oil in a kadai add mustard,jeera.
Let them splutter. Now add this broccoli mixture and sprinkle salt.
Do not add water. Wait until the raw smell goes off.
Turn off the stove and let the stuffing gets cooled down.
Divide the dough into 6-7 balls.
Roll the dough to a small circle and keep the filling inside.
Close them and dust some flour on the surface.
Now roll it slowly using rolling pin.
Make sure the filling doesn’t ooze out. You can dust flour inbetween while rolling the stuffed dough.
Since these are parathas they need not have to be too thin.
Heat dosa tawa. Cook the parathas with Ghee or vegetable oil.
Wait until both the the sides turn golden brown.
Serve hot with Curd Pickle.
