I try to make home made snacks for the little one whenever possible. I would be lying if I say everything she eats is healthy. We do indulge her with her favorite storebought cupcakes and sweets once in a while.. Few days back I asked in IG stories what kind of content people like to see in my blog and the majority of response was Easy Toddler Snacks & healthy ish snacks for adults too. Honestly during the lockdown period it is very difficult to stop kids & as well as adults from eating junk or processed foods..The struggle is real. We all have our worst days where we are exhausted to the core. We end up indulging on snacks that are totally unhealthy. Then there are days when our energies are up and high.During that time I usually try and prepare some homemade snacks to eat throughout the week. This carrot halwa bites can be prepared a day in advance and can be stored in fridge too. Perfect during Navarathri days when there are more guests coming. We can serve this along with sundal.
Roasted Makhana, Puffed Rice, Roasted nuts,Porridges and Homemade Laddoos are my standard go to option. If you check the hashtag #resh_toddlersnack in Instagram you will find lots of laddoo varities. This carrot halwa bites is inspired from our traditional Carrot Halwa recipe. Though it takes a long time to make, I used condensed milk to make these bites quickly as well used a mix of seeds+nuts to make it slightly healthier. This can be a great snack for adults when we crave sweets post a heavy lunch. You can use your own choice of nuts and seeds. The following measurement yielded around 12 medium sized Carrot Halwa bites. Adjust measurements accordingly

- 2 Carrots
- 3 tablespoon Condensed Milk
- 1 tablespoon plain Milk
- 2 teaspoon Nutritional Yeast Flakes optional
- 1 teaspoon Cardamom Powder
- 1/2 teaspoon Melon Seeds
- 2 teaspoom Pumpkin Seeds
- 1/2 teaspoom Sunflower Seeds
- 5 Cashewnuts
- 5 Almonds
- 2 teaspoon Desiccated Coconut
- 5-8 Pistachios
- 1 Teaspoon Butter or ghee

- Grate Carrots finely. If you are using a box grater then use the side which has thin hole so that grated carrots dont take much time to cook
- Heat butter in a nonstick pan and add carrots. Saute for a minute
- Sprinkle 1/4 cup water approximately and close the pan. Let it get cooked for 10 minutes in medium flame
- Then open the lid add milk, condensed milk and mix everything together
- Let the whole mixture again get cooked in medium flame for atleast 10-12 minutes
- Stir inbetween so that carrots don't get burned
- Grind the Pistachios to a fine powder and keep it aside. We will be using this powder as garnish
- Grind together nutritional yeast flakes, desiccated coconut, pumpkin seeds, sunflower seeds,cashews, almonds together. You can use your choice of nuts and seeds based on the availability in your pantry
- Now add this powder to the pan and mix it well with carrots
- Add cardamom powder
- Now place the mixture in a plate and once it is slightly cooled down, start making balls or shape them as you wish
- Top it with Pistachio Powder and freeze the Carrot Halwa bites for atleast 25 minutes
- Then you can store them in an airtight container and store it in fridge
- I wouldn't recommend storing them outside in normal temperature
- If you are craving Carrot Halwa but didn't want to spend too much time in the kitchen then try these Halwa bites. They taste so good as well as can be made very quickly

You can add your own variations to this recipe.Add a handful of Dates along with Carrots and reduce the quantity of Condensed Milk used. You can add Cocoa powder if you want. Also instead if grinding the Desiccated Coconut you can also coat the carrot halwa bites with the coconut at the end. You can add Cinnamon Powder and Vanilla essence too 🙂 The options are endless
